How to choose the right frying pan

Materials, shapes, recipes

The right pan starts with what you want to cook.

The value of a material emerges in its use: in its response to heat, food release, maintenance, and how it complements the tools you already have. Choose the shape and size along with the material.

Iron, carbon, stainless steel, copper, or titanium?

Material Why choose it Care
Iron Eggs, omelettes, burgers, and frying. The surface develops smoothness with seasoning and use. Seasoning; hand wash, dry immediately, and apply a thin layer of oil. Avoid acidic foods.
Carbon steel Searing, frying, and quick cooking. A reactive surface without a synthetic non-stick coating. The 5 Padel manual allows hand washing or dishwasher cleaning, followed by immediate drying and a thin film of oil before storage. Avoid acidic foods. It prescribes no initial seasoning procedure.
3PLY stainless steel A versatile pan for searing, sautéing, and finishing sauces: stainless steel, aluminum, and ferritic steel. Does not require seasoning. Water, detergent, and sponge; dishwasher safe according to instructions.
4PLY copper For those who appreciate heat control: construction featuring copper, stainless steel, aluminum, and ferritic steel. Stainless steel interior in contact with food. Clean the stainless steel interior; for exterior shine, use a specific copper cleaner.
3PLY titanium Titanium cooking surface declared nickel-free by the manufacturer, with aluminum and ferritic steel in the 3PLY structure. For controlled cooking at moderate heat. Does not require seasoning. Clean with water and detergent, avoid overheating while empty.

Performance depends on the construction of the entire pan, not just the metal indicated in the name. The number of layers, base, handles, and coatings should be read in the individual product sheet.

Aluminum and non-stick: distinguishing functions

Aluminum contributes to rapid heat diffusion; when combined with a non-stick coating, the latter facilitates food release. It is a useful solution for delicate preparations and for ease of cleaning, which should be preserved with moderate heat and non-abrasive utensils.

The presence of a titanium reinforcement in a coating is not the same as a titanium cooking surface as seen in the 5 Padel 3PLY Titanium. Vickers, in particular, uses titanium and a PTFE-based coating; it is not a PFAS-free line.

Equipment that grows by function

  • An iron or carbon steel pan for searing and frying, with its patina to be maintained.
  • A stainless steel saucepan for sauces and acidic preparations, complementing iron and carbon steel.
  • A pot for pasta and soups, in the capacity you actually use.
  • A wide pan for risottos, side dishes, and shared preparations.
  • Utensils for mixing and portioning, also chosen based on the cooking surface.

A second size or a different shape can be more useful than an identical extra pan: build your set around your habitual recipes.

The value of Made in Italy

In the Al Dente and Karen references produced in Italy, the quality of stainless steel meets the constructive care of the Serafino Zani tradition. Design, finishes, and functionality come together in tools to be used every day. The specific entry in the technical data shows the country of production for each individual item.

Before buying

  • Check the cooktop: compatibility with induction depends on the individual item. Syntesi and Thema Titanium are not suitable for induction.
  • Check the packaging: a lid may be included or sold separately.
  • For lids and inserts, check the line and diameter, without assuming compatibility between collections.
  • For the oven, respect the limits of the body, handles, and lid. The wooden handle of the 5 Padel iron pan is not oven-safe.
  • Read this reference’s instructions: 5 Padel iron has an initial oil-and-heat treatment; for carbon steel the manual specifies immediate drying and a thin film of oil before storage, without prescribing initial seasoning.
