Serafino Zani · 5 Padel
Five materials. The right pan for your way of cooking.
Searing, frying, sautéing, preparing a sauce: good cooking also comes from the choice of material. The 5 Padel line offers iron, carbon steel, 3PLY stainless steel, 4PLY copper, and 3PLY titanium, with different functions and maintenance needs.
The manufacturer declares the line to be PFAS, PFOA, and PTFE-free. The cooking surface has no synthetic non-stick coating: each material requires its own technique.
Choose your 5 PadelCompare the five materials
| Material | Why choose it | Care |
|---|---|---|
| Iron | Eggs, omelettes, burgers, and frying. The surface develops smoothness through seasoning and use. | Seasoning; hand wash, dry immediately, and coat with a film of oil. Avoid acidic foods. |
| Carbon steel | Searing, frying, and quick cooking. A reactive surface, without synthetic non-stick coating. | The 5 Padel manual allows hand washing or dishwasher cleaning, followed by immediate drying and a thin film of oil before storage. Avoid acidic foods. It prescribes no initial seasoning procedure. |
| 3PLY Steel | A versatile pan for searing, sautéing, and finishing sauces: stainless steel, aluminum, and ferritic steel. | No seasoning required. Water, detergent, and sponge; dishwasher safe according to instructions. |
| 4PLY Copper | For those who appreciate heat control: construction with copper, stainless steel, aluminum, and ferritic steel. Stainless steel interior in contact with food. | Clean the stainless steel interior; for the exterior shine, use a specific copper cleaner. |
| 3PLY Titanium | Titanium cooking surface declared nickel-free by the manufacturer, with aluminum and ferritic steel in the 3PLY structure. For controlled cooking at moderate power. | No seasoning required. Clean with water and detergent; do not overheat while empty. |
The line is compatible with gas and induction hobs. For oven use, follow the instructions for the specific item: the wooden handle of the iron pans must be removed, according to the manual, before using only the body in the oven. Never place the wooden handle in the oven.
Iron and carbon steel: the patina is part of the cooking
Use and care improve food release. The 5 Padel manual prescribes an initial oil-and-heat treatment for Iron; for Carbon Steel it specifies cleaning, immediate drying and a thin film of oil before storage, without prescribing initial seasoning.
Iron, first use and maintenance
Before the first use, prepare the surface with seasoning: on the clean, dry pan, distribute a thin film of cooking oil, heat gradually until it just starts to smoke, then turn off and let it cool. Work in a ventilated area, monitor the heating, and do not prolong it. The 5 Padel sheet then prescribes washing with hot water and detergent, followed by careful drying.
After each use, let it cool down, hand wash with hot water and a non-abrasive sponge, using a little mild detergent when necessary. Do not soak and do not use the dishwasher: hand washing also preserves the wooden handle. Dry immediately and wipe on a few drops of oil with a paper towel before storing in a dry place.
Seasoning and regular use develop the patina that makes the surface progressively smoother. Darkening and color variations are part of this process; there is no need to restore the iron to its original color after every cooking session. If the patina is damaged, it can be renewed. Avoid acidic foods like tomato, lemon, and vinegar, and do not store food in the pan.
To cook, start with moderate heat and use the fat necessary for the preparation. Do not overheat when empty and do not abruptly cool a hot pan. The wooden handle is not oven-safe: if using only the body, remove the detachable handle and follow the manufacturer's instructions.
Carbon steel, first use and maintenance
The 5 Padel manual allows hand washing or dishwasher cleaning, followed by immediate drying. Before storage, spread a thin film of oil over the inner surface with kitchen paper to protect against oxidation. Avoid acidic foods and preheat briefly on low power. For first use follow the manual, rather than seasoning procedures intended for other materials.
Allow to cool before washing and dry carefully. Follow this reference’s instructions for hobs, handles and accessories; use oven gloves when parts become hot.
Two materials can do more than one
Pair iron or carbon steel with a stainless steel saucepan for tomato sauces and acidic preparations. Add a large size when you want to cook without crowding the surface, and choose utensils for turning and serving with ease.
